Ingredients:

  • 1 lb ground beef (80% lean)
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium jalapeños, deseeded and finely chopped
  • 1/2 cup cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large egg

For the Creamy Ranch Drizzle:

  • 1/2 cup ranch dressing
  • 2 tbsp sour cream
  • 1 tsp smoked paprika
  • 1 tsp lemon juice
  • 1/4 tsp garlic powder

Instructions:

1. Prepare the Meatloaf:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan. In a large mixing bowl, combine the ground beef and ground pork. Add breadcrumbs, milk, chopped onion, garlic, jalapeños, cream cheese, shredded cheddar cheese, smoked paprika, cumin, salt, pepper, and egg. Mix until everything is well combined.

2. Shape the Meatloaf:

Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape the mixture into a loaf shape, pressing it slightly to compact it.

3. Bake the Meatloaf:

Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C). About 10 minutes before it’s done, sprinkle the shredded cheddar cheese over the top and return to the oven to melt.

4. Prepare the Ranch Drizzle:

While the meatloaf is baking, combine ranch dressing, sour cream, smoked paprika, lemon juice, and garlic powder in a small bowl. Stir until smooth. Taste and adjust the seasoning as needed.

5. Serve:

Once the meatloaf is cooked through, remove it from the oven and let it rest for 5-10 minutes before slicing. Drizzle the creamy ranch sauce over the top and serve warm.

Conclusion:

Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle is a delicious and comforting dish that takes the traditional meatloaf to the next level. The smoky, spicy flavors are balanced by the creamy ranch drizzle, making it an irresistible meal. Whether served for a family dinner or at a gathering, this meatloaf will be sure to impress.
