🥩 Slow Cooker Mushroom Beef Tips

Tender, juicy beef tips slow-cooked in a rich and savory mushroom gravy.
This comforting dish is perfect for busy days and pairs beautifully with
mashed potatoes, rice, or egg noodles.

Ingredients

  • 900 g (2 lbs) beef stew meat or beef tips, cut into bite-sized pieces
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 250 g (8 oz) mushrooms, sliced (button or cremini)
  • 2 cups beef broth
  • 1 packet (1 oz) onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients:
    Place beef tips in the slow cooker. Add chopped onion, minced garlic, and sliced mushrooms.
  2. Make the Sauce:
    In a bowl, whisk together beef broth, onion soup mix, Worcestershire sauce, soy sauce, tomato paste, thyme, paprika, and black pepper.
  3. Slow Cook:
    Pour sauce over beef and mushrooms. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender.
  4. Thicken the Gravy:
    Mix cornstarch with cold water until smooth. Stir into slow cooker during last 30 minutes of cooking. Cover and allow sauce to thicken.
  5. Serve:
    Garnish with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.

Tips

  • Sear the beef in a skillet for 2–3 minutes before adding to the slow cooker for deeper flavor.
  • Add carrots or peas for extra vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
