🥩 Slow Cooker Mushroom Beef Tips
Tender, juicy beef tips slow-cooked in a rich and savory mushroom gravy.
This comforting dish is perfect for busy days and pairs beautifully with
mashed potatoes, rice, or egg noodles.
Ingredients
- 900 g (2 lbs) beef stew meat or beef tips, cut into bite-sized pieces
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 250 g (8 oz) mushrooms, sliced (button or cremini)
- 2 cups beef broth
- 1 packet (1 oz) onion soup mix
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions

Prepare the Ingredients:
Place beef tips in the slow cooker. Add chopped onion, minced garlic, and sliced mushrooms. -
Make the Sauce:
In a bowl, whisk together beef broth, onion soup mix, Worcestershire sauce, soy sauce, tomato paste, thyme, paprika, and black pepper. -
Slow Cook:
Pour sauce over beef and mushrooms. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender. -
Thicken the Gravy:
Mix cornstarch with cold water until smooth. Stir into slow cooker during last 30 minutes of cooking. Cover and allow sauce to thicken. -
Serve:
Garnish with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.
Tips
- Sear the beef in a skillet for 2–3 minutes before adding to the slow cooker for deeper flavor.
- Add carrots or peas for extra vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
