🌮 Mexican Tortilla Pinwheels

Creamy, flavorful, and packed with Tex-Mex goodness, these Mexican Tortilla Pinwheels
are the perfect appetizer for parties, gatherings, lunchboxes, or even a quick snack.
Easy to prepare ahead of time, they’re always a crowd favorite!

Ingredients

  • 4 large flour tortillas (10-inch)
  • 1 package (8 oz / 225 g) cream cheese, softened
  • 1 cup shredded Mexican blend cheese (or cheddar cheese)
  • ½ cup sour cream
  • ½ cup salsa (well drained)
  • ½ cup canned black beans, drained and rinsed
  • ½ cup sweet corn kernels (drained)
  • ¼ cup red bell pepper, finely diced
  • 2 tablespoons green onions, finely chopped
  • 1 teaspoon taco seasoning
  • Fresh cilantro, finely chopped (optional)

Instructions

  1. Prepare the Filling:
    In a large bowl, combine softened cream cheese and sour cream.
    Mix until smooth and creamy.
  2. Add the Flavor:
    Stir in shredded cheese, taco seasoning, salsa, black beans, corn,
    red bell pepper, green onions, and cilantro (if using). Mix well.
  3. Spread the Mixture:
    Lay a tortilla flat and spread an even layer of filling over the surface,
    leaving a small border around the edges.
  4. Roll Tightly:
    Roll the tortilla tightly into a log. Repeat with remaining tortillas.
  5. Chill:
    Wrap each roll tightly in plastic wrap and refrigerate for 1–2 hours
    (or up to 24 hours) to firm up.
  6. Slice & Serve:
    Unwrap and slice into 1-inch pinwheels using a sharp knife.
    Arrange on a serving platter and serve chilled.

Tips for Perfect Pinwheels

  • Drain salsa, beans, and corn thoroughly to prevent soggy tortillas.
  • Chill completely before slicing for clean, neat cuts.
  • Add diced jalapeños or hot sauce for extra spice.
  • Make a day ahead — perfect for entertaining!
