🌮 Mexican Tortilla Pinwheels
Creamy, flavorful, and packed with Tex-Mex goodness, these Mexican Tortilla Pinwheels
are the perfect appetizer for parties, gatherings, lunchboxes, or even a quick snack.
Easy to prepare ahead of time, they’re always a crowd favorite!
Ingredients
- 4 large flour tortillas (10-inch)
- 1 package (8 oz / 225 g) cream cheese, softened
- 1 cup shredded Mexican blend cheese (or cheddar cheese)
- ½ cup sour cream
- ½ cup salsa (well drained)
- ½ cup canned black beans, drained and rinsed
- ½ cup sweet corn kernels (drained)
- ¼ cup red bell pepper, finely diced
- 2 tablespoons green onions, finely chopped
- 1 teaspoon taco seasoning
- Fresh cilantro, finely chopped (optional)
Instructions

Prepare the Filling:
In a large bowl, combine softened cream cheese and sour cream.
Mix until smooth and creamy. -
Add the Flavor:
Stir in shredded cheese, taco seasoning, salsa, black beans, corn,
red bell pepper, green onions, and cilantro (if using). Mix well. -
Spread the Mixture:
Lay a tortilla flat and spread an even layer of filling over the surface,
leaving a small border around the edges. -
Roll Tightly:
Roll the tortilla tightly into a log. Repeat with remaining tortillas. -
Chill:
Wrap each roll tightly in plastic wrap and refrigerate for 1–2 hours
(or up to 24 hours) to firm up. -
Slice & Serve:
Unwrap and slice into 1-inch pinwheels using a sharp knife.
Arrange on a serving platter and serve chilled.

- Drain salsa, beans, and corn thoroughly to prevent soggy tortillas.
- Chill completely before slicing for clean, neat cuts.
