Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • ½ cup tomato sauce
  • ½ cup salsa
  • 1 cup canned black beans, drained (optional)
  • 1 cup corn kernels
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Beef Filling:
    Heat olive oil in a skillet over medium heat. Cook onion until soft (3–4 minutes).
    Add garlic and cook 30 seconds. Add ground beef and cook until browned.
    Drain excess fat.

    Stir in taco seasoning, tomato sauce, salsa, black beans (if using), and corn.
    Simmer 5 minutes until slightly thickened. Remove from heat.

  2. Prepare the Batter:
    In a bowl, whisk eggs, milk, flour, salt, and baking powder until smooth.
  3. Assemble the Pie:
    Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.

    Spread beef mixture evenly in dish. Sprinkle cheddar and mozzarella over top.
    Pour batter evenly over everything.

  4. Bake:
    Bake 35–40 minutes until golden brown and set in center.
    Rest 5–10 minutes before slicing.
