🍰 Homemade Granny Cake

A soft, old-fashioned Southern-style cake topped with warm brown sugar and pecans,
then finished with a rich buttery glaze. This comforting classic is perfect for
family gatherings, holidays, or whenever you crave a nostalgic homemade dessert.

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup brown sugar (light or dark)
  • 1 cup chopped pecans

For the Glaze:

  • ½ cup unsalted butter (1 stick)
  • ½ cup evaporated milk
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare Batter: In a large bowl, mix flour, sugar, baking soda, and salt.
  3. Add eggs, crushed pineapple (with juice), and vanilla extract. Stir until combined (do not overmix).
  4. Pour batter evenly into prepared baking dish.
  5. Add Topping: Sprinkle brown sugar evenly over batter, then top with chopped pecans.
  6. Bake: Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Prepare Glaze: While baking, combine butter, evaporated milk, and sugar in a saucepan over medium heat.
  8. Bring to a gentle boil and cook 2–3 minutes, stirring constantly.
  9. Remove from heat and stir in vanilla extract.
  10. Finish: Immediately pour warm glaze evenly over the hot cake once it comes out of the oven.
  11. Allow cake to cool slightly before serving so glaze can soak in.

Serving Tips

  • Serve warm or at room temperature.
  • Add a scoop of vanilla ice cream for extra indulgence.
  • Store covered at room temperature for up to 2 days or refrigerate up to 5 days.
Pro Tip:
Pour the glaze while the cake is still hot — this allows it to fully soak in,
making the cake incredibly moist and flavorful.
