Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 can (20 oz) crushed pineapple (with juice)
- 1 teaspoon vanilla extract
For the Topping:
- 1 cup brown sugar (light or dark)
- 1 cup chopped pecans
For the Glaze:
- ½ cup unsalted butter (1 stick)
- ½ cup evaporated milk
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare Batter: In a large bowl, mix flour, sugar, baking soda, and salt.
- Add eggs, crushed pineapple (with juice), and vanilla extract. Stir until combined (do not overmix).
- Pour batter evenly into prepared baking dish.
- Add Topping: Sprinkle brown sugar evenly over batter, then top with chopped pecans.
- Bake: Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare Glaze: While baking, combine butter, evaporated milk, and sugar in a saucepan over medium heat.
- Bring to a gentle boil and cook 2–3 minutes, stirring constantly.
- Remove from heat and stir in vanilla extract.
- Finish: Immediately pour warm glaze evenly over the hot cake once it comes out of the oven.
- Allow cake to cool slightly before serving so glaze can soak in.
