Ingredients
- 3 medium cucumbers, thinly sliced
- 2 medium tomatoes, sliced or cut into wedges
- 1 small red onion, thinly sliced
- ½ cup white vinegar (or apple cider vinegar)
- ¼ cup water
- 2 tablespoons olive oil
- 1–2 tablespoons sugar (adjust to taste)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano (optional)
- 1 tablespoon fresh chopped parsley (optional)
Instructions
- Prepare the Vegetables: Wash and slice cucumbers, tomatoes, and red onion. Place them in a large mixing bowl.
- Make the Marinade: In a separate bowl, whisk together vinegar, water, olive oil, sugar, salt, black pepper, and oregano until sugar fully dissolves.
- Combine: Pour marinade over sliced vegetables and toss gently to coat evenly.
- Marinate: Cover and refrigerate for at least 1 hour. For best flavor, marinate 2–4 hours.
- Serve: Stir gently before serving and garnish with fresh parsley if desired.
