🛒 Ingredients

For the Salad:

  • 2 cups cooked pasta (penne, rotini, or bow tie)
  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ½ cup sweet corn (fresh or canned, drained)
  • ¼ cup black olives, sliced (optional)
  • 2 tablespoons fresh parsley, chopped

For the Dressing:

  • ¾ cup mayonnaise
  • 2 tablespoons Greek yogurt (or sour cream)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

👩‍🍳 Instructions

  1. Cook the Pasta: Boil pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside to cool.
  2. Prepare the Ingredients: Dice the cooked chicken and chop all vegetables.
  3. Make the Dressing: In a medium bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, olive oil, garlic powder, salt, and pepper until smooth and creamy.
  4. Assemble the Salad: In a large mixing bowl, combine pasta, chicken, tomatoes, cucumber, bell pepper, red onion, corn, olives, and parsley.
  5. Mix & Chill: Pour dressing over salad and toss gently until evenly coated. Cover and refrigerate for at least 30 minutes before serving for best flavor.

  • Add shredded cheddar or feta cheese for a richer taste.
