Ingredients
- 1½ pounds beef sirloin or stew meat, cut into strips or chunks
- 2 bell peppers (red and green), sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- ¼ cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 teaspoon ground ginger
- ½ teaspoon black pepper
Optional additions:
- 1 tablespoon brown sugar
- ½ teaspoon red pepper flakes

Prepare the Slow Cooker
Place the beef, sliced bell peppers, onion, and garlic into the slow cooker. -
Make the Sauce
In a bowl, mix together:- Beef broth
- Soy sauce
- Ground ginger
- Black pepper
- Brown sugar (optional)
Pour the sauce over the beef and vegetables.

Cover and cook on:- LOW: 5–6 hours
- HIGH: 3–4 hours
Until the beef becomes tender.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to create a slurry.
Stir it into the slow cooker during the last 20–30 minutes of cooking to thicken the sauce. -
Serve
Once the sauce thickens and the beef is tender, the dish is ready to serve.
