Ingredients
- 1½ pounds ground beef
- 3–4 medium potatoes, thinly sliced
- 2 cups carrots, cut into chunks
- 1 packet onion soup mix
Optional:
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 tablespoons ketchup (for topping)
Instructions

Preheat the Oven
Preheat your oven to 375°F (190°C).
Prepare 4 sheets of heavy-duty aluminum foil or small foil trays. -
Prepare the Meatloaf
In a bowl, combine:- Ground beef
- Onion soup mix
Mix until just combined.
Form into 4 round mini meatloaves. -
Assemble the Packets
Divide the sliced potatoes and carrots evenly among the foil sheets.
Place one mini meatloaf on top of each portion.
(Optional) Add a small amount of ketchup on top of each meatloaf. -
Seal and Bake
Seal the foil packets tightly.
Place them on a baking sheet and bake for 45–55 minutes, or until the meat is fully cooked and the vegetables are tender. -
Serve
Carefully open the packets (watch for steam) and serve hot directly from the foil or transfer to plates.
Storage
- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Reheating: Reheat in the oven or microwave.
