Ingredients

  • 1½ pounds ground beef
  • 3–4 medium potatoes, thinly sliced
  • 2 cups carrots, cut into chunks
  • 1 packet onion soup mix

Optional:

  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C).
    Prepare 4 sheets of heavy-duty aluminum foil or small foil trays.
  2. Prepare the Meatloaf
    In a bowl, combine:

    • Ground beef
    • Onion soup mix

    Mix until just combined.
    Form into 4 round mini meatloaves.

  3. Assemble the Packets
    Divide the sliced potatoes and carrots evenly among the foil sheets.
    Place one mini meatloaf on top of each portion.
    (Optional) Add a small amount of ketchup on top of each meatloaf.
  4. Seal and Bake
    Seal the foil packets tightly.
    Place them on a baking sheet and bake for 45–55 minutes, or until the meat is fully cooked and the vegetables are tender.
  5. Serve
    Carefully open the packets (watch for steam) and serve hot directly from the foil or transfer to plates.

Storage
