Ingredients

  • 1 lb (450g) ground beef
  • 3 cups potatoes, diced (small cubes)
  • 1½ cups bell peppers (mixed colors), chopped
  • 1 small onion, chopped
  • 1½ cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste

Instructions

  1. Prep the Oven
    Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cook the Beef
    In a skillet, cook ground beef with onion until browned.
    Drain excess fat.
  3. Roast the Veggies
    Toss potatoes and peppers with olive oil, garlic powder, paprika, salt, and pepper.
    Spread in the baking dish and bake for 20 minutes.
  4. Combine
    Remove dish, add cooked beef, and mix everything together evenly.
  5. Add Cheese
    Sprinkle shredded cheese generously over the top.
  6. Bake Again
    Return to oven for 15–20 minutes until potatoes are tender and cheese is melted and bubbly.
  7. Serve
    Let it cool slightly, garnish with parsley if desired, and enjoy!

Tips

  • Cut potatoes small so they cook faster
  • Add a pinch of chili flakes for a spicy kick
  • Swap cheddar with mozzarella or a blend for extra meltiness
