Beef, Potato & Pepper Cheesy Bake
A colorful, hearty oven-baked dish packed with seasoned beef, tender potatoes, sweet peppers, and melty cheese—no wonder kids call it a “fantasy treat”!

Ingredients
- 1 lb (450g) ground beef
- 3 cups potatoes, diced (small cubes)
- 1½ cups bell peppers (mixed colors), chopped
- 1 small onion, chopped
- 1½ cups shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
Instructions

Prep the Oven
Preheat oven to 400°F (200°C) and lightly grease a baking dish. -
Cook the Beef
In a skillet, cook ground beef with onion until browned.
Drain excess fat. -
Roast the Veggies
Toss potatoes and peppers with olive oil, garlic powder, paprika, salt, and pepper.
Spread in the baking dish and bake for 20 minutes. -
Combine
Remove dish, add cooked beef, and mix everything together evenly. -
Add Cheese
Sprinkle shredded cheese generously over the top. -
Bake Again
Return to oven for 15–20 minutes until potatoes are tender and cheese is melted and bubbly. -
Serve
Let it cool slightly, garnish with parsley if desired, and enjoy!
Tips
- Cut potatoes small so they cook faster
- Add a pinch of chili flakes for a spicy kick
- Swap cheddar with mozzarella or a blend for extra meltiness
