A fresh, creamy, and flavorful Chicken Pasta Salad that’s perfect for lunch, meal prep, picnics, or as a side dish for gatherings.
It’s packed with tender chicken, crisp vegetables, and a delicious homemade dressing.
🛒 Ingredients
For the Salad:
- 2 cups cooked pasta (penne, rotini, or bow tie)
- 2 cups cooked chicken breast, diced or shredded
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red bell pepper, diced
- ¼ cup red onion, finely chopped
- ½ cup sweet corn (fresh or canned, drained)
- ¼ cup black olives, sliced (optional)
- 2 tablespoons fresh parsley, chopped
For the Dressing:
- ¾ cup mayonnaise
- 2 tablespoons Greek yogurt (or sour cream)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and black pepper to taste

- Cook the Pasta: Boil pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside to cool.
- Prepare the Ingredients: Dice the cooked chicken and chop all vegetables.
- Make the Dressing: In a medium bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, olive oil, garlic powder, salt, and pepper until smooth and creamy.
- Assemble the Salad: In a large mixing bowl, combine pasta, chicken, tomatoes, cucumber, bell pepper, red onion, corn, olives, and parsley.
- Mix & Chill: Pour dressing over salad and toss gently until evenly coated. Cover and refrigerate for at least 30 minutes before serving for best flavor.
