Chocolate Chip Cherry Cheesecake

This rich and creamy cheesecake is topped with a delicious cherry sauce and dotted with mini chocolate chips, all atop a chocolatey cookie crust! It’s a dessert that combines tangy cheesecake, sweet cherries, and a hint of chocolate for an irresistible treat.

Ingredients

For the Crust:

  • 24 chocolate-filled, chocolate sandwich cookies (like Oreos)
  • 5 tablespoons melted salted butter

For the Cheesecake:

  • 16 oz cream cheese (2 blocks), room temperature
  • 1/2 cup sugar
  • 1/2 cup sour cream, room temperature
  • 1 tablespoon cornstarch
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

For the Topping:

  • Fresh Sweet Cherry Sauce (You can find recipes online or use store-bought cherry pie filling)

Instructions

  1. Preheat & Prepare: Preheat your oven to 325°F (165°C). Line an 8-inch square pan with foil and lightly coat with cooking spray. Set aside.
  2. Make the Crust:
Crush the sandwich cookies (including the filling) into fine crumbs. You can use a food processor or place them in a zip-top bag and crush them with a rolling pin.
Mix the crumbs with the melted butter until fully combined.
Press the mixture evenly into the bottom of the prepared pan.
Bake for 8 minutes, then remove from the oven and set aside to cool.
  3. Make the Cheesecake:
In a large bowl, beat the room temperature cream cheese with an electric mixer until smooth (about 1 minute).
Add the sugar, sour cream, and cornstarch. Beat until well blended.
Add the vanilla extract and eggs, one at a time, mixing on low just until combined. Avoid over-beating to prevent air from getting into the mixture.
Fold in the mini chocolate chips.
Pour the batter over the cooled crust and spread evenly.
  4. Bake:
Bake the cheesecake for 35-40 minutes, or until the center is almost set. The middle should jiggle slightly, but the top shouldn’t be shiny.
Turn off the oven, open the door, and leave the cheesecake inside for 1 hour.
  5. Cool & Chill:
After 1 hour, remove the cheesecake from the oven and let it cool to room temperature.
Chill the cheesecake in the refrigerator for at least 6 hours or overnight.
  6. Add Cherry Topping:
Once the cheesecake has chilled, use the foil to lift it out of the pan. Transfer to a serving dish.
Pour the cherry sauce over the top, and garnish with extra chocolate chips if desired.
  7. Serve & Enjoy:
Serve cold or let it sit at room temperature before serving. Enjoy the perfect mix of chocolate and cherry flavors in every bite!
