Ingredients

For the Filling

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • 1 can (4 oz) diced green chilies
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste

For the Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1½ cups chicken broth
  • 1 cup sour cream
  • 1 can (4 oz) diced green chilies
  • ½ teaspoon cumin
  • Salt to taste

Additional

  • 8 small flour tortillas
  • 1 cup shredded cheese (for topping)
  • Fresh chopped cilantro (optional, for garnish)

Instructions

1. Prepare the Filling

  1. In a large bowl, combine shredded chicken, sour cream, Monterey Jack, cheddar, green chilies, garlic powder, onion powder, salt, and pepper.
  2. Mix until well combined.

2. Make the Sauce

  1. In a saucepan over medium heat, melt the butter.
  2. Whisk in the flour and cook for about 1 minute until lightly golden.
  3. Gradually add chicken broth while whisking continuously.
  4. Cook until slightly thickened.
  5. Remove from heat and stir in sour cream, green chilies, cumin, and salt.
  6. Mix until smooth and creamy.

3. Assemble the Enchiladas

  1. Preheat oven to 375°F (190°C).
  2. Spread a small amount of sauce on the bottom of a baking dish.
  3. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  4. Pour remaining sauce over enchiladas and sprinkle shredded cheese on top.

4. Bake

  1. Bake for 20–25 minutes, until cheese is melted and bubbly.

5. Serve

  1. Garnish with fresh cilantro if desired.
  2. Serve warm with rice, beans, or fresh salad.
