Ingredients
- 1 can (20 oz) crushed pineapple, drained
- 1 cup sweetened shredded coconut
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
Optional:
- 1 cup mini marshmallows
- ½ cup chopped pecans or walnuts
- Maraschino cherries for garnish

Prepare the Base
In a large bowl, whisk together the vanilla pudding mix and cold milk until smooth and slightly thickened. -
Add Pineapple & Coconut
Stir in the drained crushed pineapple and shredded coconut until well combined. -
Fold in Whipped Topping
Gently fold in the whipped topping until the mixture becomes light and fluffy. -
Optional Add-ins
Mix in mini marshmallows and nuts if desired. -
Chill
Cover and refrigerate for at least 1–2 hours to let flavors blend and the texture set. -
