Ingredients

  • 3 medium cucumbers, thinly sliced
  • 2 medium tomatoes, sliced or cut into wedges
  • 1 small red onion, thinly sliced
  • ½ cup white vinegar (or apple cider vinegar)
  • ¼ cup water
  • 2 tablespoons olive oil
  • 1–2 tablespoons sugar (adjust to taste)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano (optional)
  • 1 tablespoon fresh chopped parsley (optional)

Instructions

  1. Prepare the Vegetables: Wash and slice cucumbers, tomatoes, and red onion. Place them in a large mixing bowl.
  2. Make the Marinade: In a separate bowl, whisk together vinegar, water, olive oil, sugar, salt, black pepper, and oregano until sugar fully dissolves.
  3. Combine: Pour marinade over sliced vegetables and toss gently to coat evenly.
  4. Marinate: Cover and refrigerate for at least 1 hour. For best flavor, marinate 2–4 hours.
  5. Serve: Stir gently before serving and garnish with fresh parsley if desired.
