Roasted Butternut Spinach Orzo
A comforting and balanced dish, where the fondant of roasted butternut meets the sweetness of orzo and the freshness of spinach… simple, fragrant and terribly gourmet 🧡🍂
Ingredients :
1 cup of barley
2 cups butternut squash, diced
2 c. with olive oil soup
3 cups of fresh spinach
1/2 cup grated Parmesan
1 c. with fresh thyme soup (optional)
Salt and pepper….
Preparation:
Preheat the oven to 200°C.
Arrange the butternut cubes on a plate, sprinkle them with olive oil, salt and pepper, then mix.
Bake for 20-25 minutes until tender and slightly caramelized.
Meanwhile, cook the orzo in a large saucepan of salted boiling water according to package instructions. Listen and book.
In the saucepan still hot, add the spinach and let it drop gently.
Add cooked orzo, roasted butternut and thyme. Mix it up gently.
Add the grated Parmesan, adjust the seasoning and serve well warm.
