tender potatoes, beans, corn, and melted cheese. This Slow Cooker Cowboy Casserole

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, peeled and diced (about 4 cups)
  • 1 can (15 oz / 425 g) kidney beans, drained and rinsed
  • 1 can (15 oz / 425 g) corn kernels, drained
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • 1 can (14.5 oz / 410 g) diced tomatoes, undrained
  • 1 cup (240 ml) beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 ½ cups (170 g) shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

1. Brown the Beef

In a large skillet over medium heat, cook the ground beef until browned.
Add the diced onion and cook for 3–4 minutes until softened.
Stir in the garlic and cook for 30 seconds more. Drain excess grease.

2. Layer in the Slow Cooker

Lightly grease your slow cooker. Add the diced potatoes as the bottom layer.
Top with the cooked beef mixture.

3. Add Remaining Ingredients

Add the kidney beans, corn, cream of mushroom soup, diced tomatoes (with juice),
and beef broth. Sprinkle in the smoked paprika, chili powder, thyme, salt, and pepper.
Stir gently to combine.

4. Cook

Cover and cook on:

  • LOW: 6–7 hours
  • HIGH: 3–4 hours

Cook until the potatoes are tender.

5. Add Cheese

About 20 minutes before serving, sprinkle the shredded cheddar cheese over the top.
