Ingredients

  • 2–3 boneless, skinless chicken breasts
  • 3 cups rigatoni pasta (uncooked)
  • 2 cups butternut squash puree
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded Parmesan or mozzarella cheese

Instructions

  1. Layer
    Add chicken breasts to the slow cooker.
    Pour in butternut squash puree, heavy cream, and chicken broth.
  2. Season
    Sprinkle garlic powder, Italian seasoning, salt, and pepper.
  3. Cook
    Cover and cook:
    • LOW: 4–5 hours
    • HIGH: 2–3 hours
  4. Shred & Add Pasta
    Shred the chicken directly in the slow cooker.
    Add uncooked rigatoni and stir well.
  5. Finish
    Cook on HIGH for 20–30 minutes until pasta is tender.
    Stir in cheese until melted and creamy.

Tips

  • Add spinach at the end for extra flavor
  • Use pre-cooked pasta to speed things up
  • Swap cream with half-and-half for a lighter version
