🛒 Ingredients
For the Meatballs
- 1 lb (450 g) ground beef
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
For the Stew
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 small onion, chopped
- 3 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
👩🍳 Instructions
-
Prepare the meatballs:
In a large bowl, mix the ground beef, breadcrumbs, egg, garlic, onion,
salt, pepper, and parsley until well combined. Form the mixture into
small meatballs (about 1 inch in diameter). -
Brown the meatballs (optional but recommended):
Heat olive oil in a skillet over medium heat and brown the meatballs
for 3–4 minutes, turning occasionally. This step adds extra flavor,
but you can skip it if you’re short on time. -
Add ingredients to the slow cooker:
Place the diced potatoes, carrots, and chopped onion into the slow cooker.
Add the meatballs on top. -
Prepare the broth:
In a bowl, whisk together the beef broth, tomato paste, paprika,
thyme, salt, and black pepper. -
Cook the stew:
Pour the broth mixture over the ingredients. Cover and cook on
LOW for 6–8 hours or HIGH for 3–4 hours,
until the potatoes are tender and the meatballs are fully cooked. -
Serve:
Stir gently before serving. Taste and adjust seasoning if needed.
Serve hot and garnish with fresh parsley if desired.
💡 Tips
- Add peas or green beans during the last 30 minutes of cooking for extra vegetables.
- For a thicker stew, mix 1 tablespoon cornstarch with 2 tablespoons water and stir it into the stew 20 minutes before serving.
- Leftovers can be stored in the refrigerator for up to 3 days.
Enjoy your warm and comforting Slow Cooker Meatball and Potato Stew —
a simple meal that fills the kitchen with rich, delicious aromas.
