Ingredients
- 1½ pounds ground beef
- 3–4 medium potatoes, cut into chunks
- 1 small onion, finely chopped
- 1 packet onion soup mix
- ½ cup ketchup
Optional:
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- Fresh parsley for garnish
Instructions

Prepare the Meatloaf Mixture
In a mixing bowl, combine:- Ground beef
- Chopped onion
- Onion soup mix
Mix gently until well combined.
Form the mixture into 4–5 small oval meatloaves. -
Prepare the Potatoes
Place the cut potatoes in the bottom of the slow cooker and spread them evenly.
Season lightly with salt and pepper if desired. -
Assemble the Dish
Place the mini meatloaves on top of the potatoes.
Spread the ketchup evenly over each meatloaf. -
Cook
Cover and cook on:- LOW: 6–7 hours
- HIGH: 3–4 hours
Cook until the meatloaves are fully cooked and the potatoes are tender.

Serve the mini meatloaves with the potatoes and spoon some of the flavorful juices from the slow cooker over the top.
Garnish with fresh parsley if desired.
