  • Total Time: About 8 hours
  • Servings: 6

Ingredients

  • 3–4 pounds beef chuck roast
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Prepare the Slow Cooker
Place the chopped onion and minced garlic at the bottom of the slow cooker. This creates a flavorful base for the roast.
  2. Add the Beef
Place the beef chuck roast on top of the onions inside the slow cooker.
  3. Prepare the Sauce
In a small bowl, whisk together:

    • Beef broth
    • Soy sauce
    • Olive oil
    • Dijon mustard
    • Dried thyme
    • Black pepper

    Mix well until fully combined.

  4. Pour the Mixture
Pour the prepared sauce evenly over the beef roast.
  5. Cook
    Cover and cook on:

    • LOW: 7–8 hours
    • HIGH: 4–5 hours

The beef is ready when it becomes very tender and easily pulls apart with a fork.

If you prefer a thicker sauce, remove about 1 cup of the cooking liquid and whisk it with cornstarch. Return it to the slow cooker and cook for an additional 10–15 minutes until thickened.
