Ingredients
- 1 pound carrots, peeled and cut into sticks
- 1 cup apple cider vinegar
- ½ cup honey
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black peppercorns
- 2 cloves garlic, peeled
Instructions

Prep Carrots
Place carrot sticks into a clean jar (or jars), packing them tightly. -
Make the Brine
In a saucepan, combine:- Apple cider vinegar
- Honey
- Salt
- Red pepper flakes

Assemble
Add garlic cloves and peppercorns into the jar.
Pour the warm brine over the carrots, fully covering them. -
Cool & Store
Let cool to room temperature, then seal and refrigerate. -
Wait (Important!)
Let sit at least 24 hours before eating for best flavor.
They get even better after 2–3 days.
