Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 1 cup apple cider vinegar
  • ½ cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black peppercorns
  • 2 cloves garlic, peeled

Instructions

  1. Prep Carrots
    Place carrot sticks into a clean jar (or jars), packing them tightly.
  2. Make the Brine
    In a saucepan, combine:
    • Apple cider vinegar
    • Honey
    • Salt
    • Red pepper flakes
    Heat gently, stirring until the honey dissolves (do not boil heavily).
  3. Assemble
    Add garlic cloves and peppercorns into the jar.
    Pour the warm brine over the carrots, fully covering them.
  4. Cool & Store
    Let cool to room temperature, then seal and refrigerate.
  5. Wait (Important!)
    Let sit at least 24 hours before eating for best flavor.
    They get even better after 2–3 days.
